Ces derni\u00e8res ann\u00e9es, le lait de coco ou la cr\u00e8me de coco sont devenus tr\u00e8s populaires, sous l\u2019influence de la cuisine indienne et tha\u00eflandaise.  Toutes ces \u00ab\u00a0graisses\u00a0\u00bb ont leurs partisans et leurs d\u00e9tracteurs.  D\u00e9couvrez ce que valent r\u00e9ellement les graisses, tant animales que v\u00e9g\u00e9tales, et les raisons pour lesquelles certaines ne sont pas aussi b\u00e9n\u00e9fiques que l\u2019on veut bien nous le faire croire.\u00a0<\/b><\/p><h3>\u00a0<\/h3><h3><strong>Graisses animales<\/strong><\/h3><p><span style=\"font-weight: 400;\">Il s\u2019agit essentiellement de graisses satur\u00e9es, c\u2019est-\u00e0-dire solides \u00e0 temp\u00e9rature ambiante, et dans le cas du beurre, elles contiennent \u00e9galement du cholest\u00e9rol. Quelques br\u00e8ves remarques.<\/span><\/p><p><span style=\"text-decoration: underline;\">Beurre<\/span><\/p><p><span style=\"font-weight: 400;\">Le beurre est tr\u00e8s utilis\u00e9 dans les r\u00e9gimes alimentaires d\u2019Europe du Nord. En France, sa consommation est estim\u00e9e \u00e0 8,2\u00a0kg par habitant, au Danemark \u00e0 6,4\u00a0kg, en R\u00e9publique tch\u00e8que \u00e0 5,4\u00a0kg et en Suisse \u00e0 5,2\u00a0kg.\u00a0\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Sa composition en acides gras est la suivante\u00a0:<\/span><\/p><ul><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">48,8 &#8211; 59,4 acides gras satur\u00e9s<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">24 acides gras mono-insatur\u00e9s<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 &#8211; 3,4 acides gras poly-insatur\u00e9s<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">168 &#8211; 260 cholest\u00e9rol<\/span><\/li><\/ul><p><span style=\"font-weight: 400;\">Ces chiffres peuvent nous laisser penser que nous devrions \u00e9liminer le beurre de notre alimentation. Et pourtant, en France, le pays du beurre et des croissants, la pr\u00e9valence des d\u00e9c\u00e8s par maladie coronarienne est plus faible que dans les autres pays europ\u00e9ens.  Pourquoi\u00a0?\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">C\u2019est ce que les chercheurs appellent le \u00ab\u00a0paradoxe fran\u00e7ais\u00a0\u00bb.  De nouvelles recherches mettent en \u00e9vidence le r\u00f4le d\u2019autres ingr\u00e9dients courants ainsi que le fait que le mode de vie des Fran\u00e7ais n\u2019est g\u00e9n\u00e9ralement pas s\u00e9dentaire.  Cela montre que la consommation de beurre avec mod\u00e9ration n\u2019entra\u00eene pas d\u2019augmentation de HDL si elle s\u2019accompagne d\u2019une alimentation saine et d\u2019un exercice mod\u00e9r\u00e9.<\/span><\/p><p><span style=\"text-decoration: underline;\">Lard<\/span><\/p><p><span style=\"font-weight: 400;\">Le lard est surtout utilis\u00e9 dans le sud de l\u2019Europe pour enrichir les plats traditionnels. Il est tomb\u00e9 en disgr\u00e2ce \u00e0 cause de la croyance selon laquelle il pr\u00e9sentait un pourcentage \u00e9lev\u00e9 de graisses satur\u00e9es. Pourtant, ce pourcentage est beaucoup plus faible (comme vous pouvez le voir) que le beurre, et le lard contient un pourcentage \u00e9lev\u00e9 d\u2019acides gras mono-insatur\u00e9s et poly-insatur\u00e9s &#8211; et beaucoup moins de cholest\u00e9rol.\u00a0\u00a0<\/span><\/p><ul><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">34,1 &#8211; 46,7 acides gras satur\u00e9s<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">37,1 &#8211; 45,1 acides gras mono-insatur\u00e9s<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">9 &#8211; 28,8 acides gras poly-insatur\u00e9s<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">70 &#8211; 95 cholest\u00e9rol<\/span><\/li><\/ul><p><span id=\"hs-cta-wrapper-4d2065b9-8d9b-46b9-94b1-90f80801ffbe\" class=\"hs-cta-wrapper\"><span id=\"hs-cta-4d2065b9-8d9b-46b9-94b1-90f80801ffbe\" class=\"hs-cta-node hs-cta-4d2065b9-8d9b-46b9-94b1-90f80801ffbe\"><!-- ><\/p>\r\n<div id=\"hs-cta-ie-element\"><\/div>\r\n<p><!--><\/span><\/span><\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-b0d79da elementor-widget elementor-widget-text-editor\" data-id=\"b0d79da\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-3f786c8 elementor-widget elementor-widget-text-editor\" data-id=\"3f786c8\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<h3><b>Graisses v\u00e9g\u00e9tales<\/b><\/h3>\n<p>\u00a0<\/p>\n<p><span style=\"text-decoration: underline;\">Margarine<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La margarine est compos\u00e9e d\u2019huiles v\u00e9g\u00e9tales et d\u2019huiles de poisson hydrog\u00e9n\u00e9es, un proc\u00e9d\u00e9 qui est \u00e0 l\u2019origine d\u2019une pr\u00e9sence importante d\u2019acides gras trans. La technologie actuelle permet de produire une margarine ne contenant pratiquement pas d\u2019acides gras trans et pr\u00e9sentant une teneur significative en acides gras insatur\u00e9s.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Par rapport au beurre, la margarine pr\u00e9sente l\u2019inconv\u00e9nient de ne contenir pratiquement aucune vitamine liposoluble. Noir, au lait, blanc, aux noix&#8230;  Au niveau di\u00e9t\u00e9tique, le probl\u00e8me du chocolat ne r\u00e9side pas dans le beurre de cacao, mais dans le sucre.\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Le beurre de cacao pr\u00e9sente une teneur \u00e9lev\u00e9e en acide st\u00e9arique, un acide gras satur\u00e9 que notre corps transforme en acide ol\u00e9ique &#8211; le composant de base de l\u2019huile d\u2019olive.  M\u00eame s\u2019il ne faut pas les consommer en exc\u00e8s en raison de la quantit\u00e9 de calories qu\u2019ils apportent, le beurre de cacao et le chocolat, en particulier le chocolat noir ou la poudre de cacao sans ingr\u00e9dients ajout\u00e9s, n\u2019entra\u00eenent pas une augmentation du taux de cholest\u00e9rol comme d\u2019autres beurres ou graisses solides.\u00a0<\/span><\/p>\n<p>\u00a0<\/p>\n<p><span style=\"text-decoration: underline;\">Beurre de cacahu\u00e8te<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Le beurre de cacahu\u00e8te, si largement consomm\u00e9 dans de nombreuses r\u00e9gions du monde, poss\u00e8de \u00e9galement un potentiel calorique \u00e9lev\u00e9. Il est compos\u00e9 de 53\u00a0% d\u2019acides gras mono-insatur\u00e9s, 26\u00a0% d\u2019acides gras poly-insatur\u00e9s et 21\u00a0% d\u2019acides gras satur\u00e9s.  Il apporte 13\u00a0% de niacine (B3), de la vitamine E (10\u00a0%) et du cuivre (8\u00a0%), mais il pr\u00e9sente \u00e9galement des pourcentages \u00e9lev\u00e9s de magn\u00e9sium et de sodium. Ce produit est devenu r\u00e9cemment tr\u00e8s pris\u00e9 et c\u2019est un ingr\u00e9dient utilis\u00e9 dans les currys, les glaces maison, les milkshakes et m\u00eame comme \u00e9paississant pour les plats de riz de type risotto ou les cr\u00e8mes de l\u00e9gumes.\u00a0\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Le probl\u00e8me des d\u00e9riv\u00e9s de la noix de coco est leur forte teneur en graisses satur\u00e9es.  100\u00a0g de lait de coco contiennent<\/span><\/p><ul><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">18,3\u00a0g d\u2019acides gras satur\u00e9s<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1,4\u00a0g d\u2019acides gras mono-insatur\u00e9s<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">0,3\u00a0g d\u2019acides gras poly-insatur\u00e9s<\/span><\/li><\/ul><p><span style=\"font-weight: 400;\">Des \u00e9tudes men\u00e9es en Polyn\u00e9sie ont montr\u00e9 que les acides gras de la noix de coco augmentent les taux de LDL. Certaines \u00e9tudes ont \u00e9galement montr\u00e9 que dans certaines des \u00eeles participant aux \u00e9tudes, le taux de HDL a \u00e9galement augment\u00e9, ce qui est attribu\u00e9 \u00e0 la consommation de noix de coco crue et au fait que certains composants de la noix de coco abaissent le taux de LDL.<\/span><\/p><p><span style=\"font-weight: 400;\">En cas de doute et en attendant des r\u00e9sultats plus d\u00e9finitifs, les currys et glaces \u00e0 base de lait de coco ne doivent \u00eatre consomm\u00e9s que de fa\u00e7on occasionnelle. Cela ne veut pas dire qu\u2019il faut renoncer \u00e0 un bon curry, mais il faut en manger avec mod\u00e9ration.
